We mostly design html-email to allow a fair amount of backwards compatability, so we avoid many of the latest css rendering issues. Tables continue to be the best way to maintain consistency across different email systems. Rules are rules. Learn them to forget them. As Malcolm Gladwell explains in "Blink" the accumulation of hard knowledge creates the space for the unconscious to operate. If you consciously focus on the rules your design will be bad.
